Preparation:
Take the hard boiled eggs. Cut it into two halves. Take care to separate the egg yolks so that it does not break. Now mix the shredded capsicum and onions with the smashed potatoes. Add the spices such as pepper, salt to taste. Toss the smashed mixture with a spoon of oil on a frying pan. Ensure that the mixture is well mixed with mayonnaise. Now, take a spoon of the mixture and fill it inside the hollow white portion of the cut egg. Then simply allow it to be baked at 250 degree centigrade temperature for 10 minutes. As the reddish-brown tinge appears on the egg, take it out and put the egg yolk whipped in cream as a topping. You can garnish the topping with cheese and pepper too.
