Fresh vegetables are always a good option for our overall well-being. Vegetables are a good source of fiber which can beansbe a great reliever of various ailments. So try the following preparation for your healthy life.

Ingredients:

1.    Extra virgin olive oil- 4 tsp (place individually)
2.    Garlic clove- 1 (diced)
3.    Red bell pepper- 1 (minced)
4.    Plain polenta (prepared tube)- 1 16 ounce (chopped into ½ inch blocks)


5.    Onion (small size)- 1 (sliced finely)
6.    Vegetable broth- ¾ cup
7.    Baby spinach- 4 cup
8.    Better beans (rinsed)- 1 15 ounce
9.    Paprika- ½ tsp (smoked desirable & a little bit extra for garnishing)
10.    Vinegar (sherry)- 1 tsp
11.    Monterey jack cheese or manchego (shredded)- ½ cup

Direction:

•    Take a large sized non-stick skillet & heat oil (2 tsp) on medium temperature.
•    Pour the polenta & stir well frequently.
•    Allow it to cook for almost 9-10 minutes (till it turns brown in colour).
•    Remove from the heat & place it in a plate.
•    Now lower the temperature & pour the remaining oil along with the garlic.
•    Allow it to cook for almost 30-35 seconds till redolent.
•    Now pour the red bell pepper & stir well.
•    Let it cook for almost 3-4 minutes more & then scatter the paprika & stir well.
•    Now add the vegetable broth along with the beans & spinach.
•    Cook it well till the spinach is drooped & beans are tender.
•    Take it off from the oven & add the cheese as well as vinegar.
•    Now serve the vegetables over the polenta.
•    You can also scatter the paprika if you want.
