Arugula is an excellent source of phytonutrients, which is beneficial for various types of cancer. It is also a rich source
of vitamin C. This supplier of vitamin C, folic acid, and beta-carotene is beneficial for controlling homocysteine levels. It supplies vitamin A or beta- carotene, which can reduce the chances of cataracts. It has potential to play the role of an antioxidant.
Ingredients for the dressing purpose:
1. Minced shallot (finely)- 2 tbsp
2. Extra virgin olive oil- 3 tbsp
3. Vegetable broth- 3 tbsp
4. Salt- As per taste
5. Dijon mustard- ½ tsp
6. Balsamic vinegar- ½ tbsp
7. Pepper (freshly ground)- According to taste
Ingredients for salad:
1. Arugula (trimmed)- 4 cup
2. Red Bartlett pears- 2
3. Diced walnuts- ½ cup
4. Butter head lettuce- 5 cup (cut into small pieces)
Direction:
• For making the dressing take a medium sized bowl & add the vegetable broth, oil, shallot, and vinegar, pepper, salt & mustard.
• For the salad arrangement take a small sized skillet & roast the walnuts over the medium temperature.
• Stir for almost 2-3 minutes, till the smell comes.
• Then remove from the heat & place in the separate bowl.
• Now chop the pears into small slices & put in the serving bowl.
• Pour the spoon of dressing & mix well for even coating.
• Now add the arugula along with leftover dressing & lettuce.
• Stir well to mix properly & sprinkle the walnuts on the top.
