Artichoke is an excellent source of vitamin C & is able to play the role of a powerful antioxidant. Study reveals that it is
also beneficial for curing asthma. Artichoke is an outstanding support provider for the capillaries structure. This rich source of folic acid, vitamin C and beta-carotene is able to reduce the level of homocysteine effectively. This high supplier of potassium is able to reduce the chances of kidney stones.
Ingredients:
1. Artichokes- 10 (chopped)
2. Extra virgin olive oil- 1-2 tbsp
3. Potatoes- 1 ½ pound (peeled & chop in half)
4. Pepper (freshly ground)- As per taste
5. Carrot- 1 pound (skin removed & chop lengthwise)
6. Salt- According to taste
7. Leek- 1 pound (light green & white portion only, lengthwise chopped, properly washed & diced into small pieces)
8. Water- 1 ½ cup
9. Fresh dill- 1/3 cup (diced finely)
10. Fresh parsley – 2/3 cup (diced finely)
11. Lemon juice- ¼ cup
12. Lemon zest (freshly grated)- 1 tbsp
13. Fresh mint- 2 tbsp (finely minced)
Direction:
• Lengthwise chop the artichokes.
• Now in a large sized Dutch oven heat oil on medium temperature.
• Add the artichokes along with the leeks, salt, pepper, carrots & potatoes.
• Stir continuously & allow it cook till you get the flexible texture.
• Pour water & turn the temperature to a little lower one.
• Cover the top partially & let it cook for almost 20-25 minutes (till you get the soft texture).
• Now add the dills along with the parsley, lemon juice, lemon zest & mint.
• Sprinkle the pepper along with the salt.
• Stir well & take it off from the heat.
• Allow it to cool & then serve.
